You should probably try




this recipe. not because it is gourmet. because it isn't. not because it is vegetarian & promoted at whole foods. because it's not that either. but it is a true to goodness casserole. you will feel like a pro. you will feel prepared for any church potluck sprung on you, last minute. you will feel like a real girl (as in pinocchio feels like a real boy).


Cowboy Goulash
1 lb. mac & cheese (this is straight from the recipe book. i don't know how to even figure out if i have a pound of mac & cheese. i just used 2 boxes & it was perf.)                                      
1 lb. ground beef                      
1/2 c. chopped onion
1 T. chili powder
1 (16-oz) can diced tomatoes in juice
1 can whole kernel corn, drained
salt & pepper to taste


preheat oven: 350


prepare mac & cheese according to directions on the box.  brown beef. drain. add chili powder, s&p, & onion. add tomato and juice. simmer for 5 minutes; add corn & stir. mix with macaroni. (for this step, i just used my 9x13 pan and added 1/2 macaroni & then beef mixture. mixed together & added a little more until it all was in the pan & mixed together)  top with grated cheese. (i did a cheddar/ mozzarella mix...because that is what we had...but it was great!) bake for approximately 30 minutes (or until cheese is melted).


this isn't an exciting meal. but it is exciting for a wednesday. or you know, one of those days when you want something easy + tasty. and you are really hoping for leftovers. because you will have some. for us, it isn't a huge problem because shawn eats like a elephant. (you thought i was going to say horse, right? no, it's way past that. elephants eat over 150 lbs of food a day. shawn is in their league.) 


this casserole would be perfect paired with a lettuce salad & garlic bread.

shawn does it like an elephant! at wednesday meals, we always just automatically gave him double (or triple) what we give everyone else ... and he still comes back when the bell rings. we will have to try this recipe!
